Valckenberg Four Course Wine Dinner Menu:
Course 1:
Starter - Paired with Valckenberg Prinz Salm 'Zwei Prinzen' Riesling 22
Flammkuchen: Often referred to as “German pizza,” this thin, crispy flatbread is topped with crème fraîche, thinly sliced onions, and smoked bacon. It’s light yet full of flavor, perfect for starting the meal.
Course 2:
Soup - Paired with Valckenberg Pfluger Biodynamite 21
Mushroom Soup (Champignoncremesuppe): A creamy German mushroom soup with a blend of fresh mushrooms, onions and garlic pureed to a velvety consistency. Finished with a drizzle of oil and garnished with fresh herbs, this soup offers an earthy richness that pairs well with main courses.
Course 3:
Main Course - Paired with Valckenberg Weingut Kopp Pinot Noir 20
Option 1: Salmon with Beurre Blanc: Perfectly seared salmon fillet drizzled with a rich beurre blanc sauce enhanced with white wine, shallots and butter. Served on a bed of lightly sautéed spinach and accompanied by potato pancakes, crispy potato pancakes.
Option 2: Chicken Cordon Bleu: Tender chicken breast stuffed with ham and cheese, breaded and fried until golden brown. Served with a lemon wedge on the side, accompanied by potato pancakes and a fresh garden salad.
Course 4:
Dessert - Paired with Valckenberg Carl Graff Mosel Riesling Spatlese 22
Kaiserschmarrn: A light, caramelized Austrian pancake torn into bite-sized pieces and dusted with powdered sugar. Serve with mixed berry compote for a sweet and satisfying finale.
